I might go for the kank, especially the lore around their “honey” globules they produce and the idea that their meat is inedible.

The Braxat! Intelligent, immensely strong, armored, it was a challenging foe. As the party advanced in power and experience, I pumped them up with living weapons from the Nature Benders to devastating effect.
